Moroccan Crepes

  • 1 1/2 cup warm water
  • 1 tsp baking powder
  • 1 cup fine semolina
  • 2 tbsp flour
  • 1 tsp active dry yeast
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 3 tbsp honey, warmed
  • 2 tbsp butter, melted

In  a bowl combine 2 tbsp of the water with the baking powder and set aside.  In a blender combine the remaining water, flour, semolina, yeast, and sugar.  Process until smooth.  Add the salt and the baking powder mixture.  Process 30 seconds longer.

Pour in a large bowl, cover with a kitchen towel, and let stand at room temperature for 1 hour.

Combine the butter and honey and set aside.

Whisk the batter until creamy.  Cook like crepes in a non-stick pan with a little canola oil.

Remove from pan and drizzle with butter and honey.  Roll up.  Keep warm until you are ready to serve.

Kimchee Pancake

  • 1 cup kimchee, drained, minced
  • 1/2 cup of the kimchee liquid
  • 1 cup flour
  • 2 eggs
  • 1 scallion, minced
  • 1/4 tsp salt
  • 1 tbsp peanut oil
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp chili flakes
  1. Combine the kimchee, kimchee liquid, flour, eggs, scallion, and salt.  Mix well.
  2. Heat the peanut oil in a large skillet and pan fry 1/4 cup large scoops of the batter for 3 minutes per side.
  3. Combine the vinegar, soy sauce, sesame oil, and chili flakes.  Mix well.
  4. Serve the pancakes with the sauce drizzled on top.

Yummy Tender Waffles

  • 1 3/4 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 cups milk
  • 2 tbsp sugar
  • 3 egg yolks and 3 egg whites, separate
  • 1/3 cup butter, melted
  • a pinch of cream of tartar
  1. Combine the flour, baking powder, salt, and sugar.
  2. Stir in the milk, the egg yolks, and melted butter.  Mix until smooth.
  3. Whip the egg whites with the cream of tartar until stiff.  Fold into the mixture.
  4. Cook in a waffle iron until tender, but not over cooked.
  5. Serve with fruit and whipped cream.

Tender White Crepes

  • 3/4 cup flour
  • 1 egg
  • 1 cup milk
  • 2 tbsp butter, melted
  • a pinch of salt
  1. Combine the all the ingredients.  Chill 30 minutes.
  2. Pan fry in 30 minutes. 
  3. Serve with fruit and whipped cream.

Buttermilk Pancakes

  • 1 cup flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 egg, beaten
  • 1 1/4 cups buttermilk
  • 2 tbsp butter, melted
  1. Combine the flour, salt, and baking soda.  Stir well.
  2. Stir in the egg, buttermilk, and butter.
  3. Stir until just moistened.
  4. Pan fry in butter.
  5. Serve with maple syrup.

Rich Crepes

  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 cup light cream
  • 1/4 cup butter, melted
  • 1 tsp vanilla
  • 1 cup flour
  • 2 tbsp sugar
  • a pinch of salt
  1. Combine all the ingredients in a blender and mix well.
  2. Pan fry in butter.
  3. Serve with whipped cream and strawberries

Almost French Toast Pancakes

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 cups milk
  • 3 eggs
  • 1/4 cup canola oil
  • 2 tbsp vinegar
  • butter
  1. Combine all the ingredients except the butter. Beat until combined but still lumpy.
  2. Melt some butter in a skillet and then pan fry the batter.  Serve with maple syrup.

Waffles

  • 1 cup flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 egg
  • 1 cup milk
  • 3 tbsp canola oil
  • whipped cream
  • berries
  1. Combin the flour, baking powder, salt, and sugar.
  2. Mix in the egg, milk, and oil until just combined.
  3. Spoon onto a hot waffle iron.
  4. Cook until golden.
  5. Serve with whipped cream and berries.

Super Thin and Delicious Crepes

  • 1 cup milk
  • 3 eggs
  • 1/2 cup flour
  • 2 tbsp butter, melted
  • 1 tbsp sugar
  • a pinch of salt
  • whipped cream
  • berries
  1. In a blender combine the milk, eggs, flour, butter, sugar, and salt.
  2. Blend well.  Chill 30 minutes.
  3. Pan fry in butter.
  4. Serve with the whipped cream and berries.

Oat Pancakes

  • 1/2 cup oats
  • a scant cup of flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • a pinch of salt
  • 1/2 tsp baking soda
  • 3/4 cup milk
  • 2/3 cup plain yogurt
  • 1 tbsp canola oil
  • 1 egg
  1. Combine all the ingredients and then let rest 15 minutes.
  2. Pan fry in butter.
  3. Serve with fruit syrup.
