Rice Muffins
- 2 cups cooked white rice
- 1/4 cup butter, melted
- 1/2 cup sugar
- 2 eggs
- 1 cup sour cream
- 3/4 cup flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- Preheat oven to 350 F.
- Combine the ingredients and mix well. Spoon into a greased, lined, muffin tin.
- Bake for 35 minutes,
